Steak tar tare on homemade focaccia bread

A true star of all appetizers

We went Europe last fall on yet another gastronomical exploration tour. One of the stops was in Belgium. What are the first things that come to mind when you think of Belgium? Obviously, the famous Belgian chocolate, Belgian ale and… steak tar tare. We visited several restaurants, including many known specifically for their steak tar tare. Ironically, we were most impressed by the recipe served in the small cafe just around the corner from our hotel.

Made with hand-chopped meat, plenty of olive oil, French grainy mustard, Worcester sauce , diced capers and shallots, salt and pepper. Served over freshly baked homemade focaccia bread (later another post on that), garnished with radish sprouts and shaved Parmesan cheese. Paired with glass of Pinot Noir - takes our memories back to Belgium in a blink of an eye.
